New Roasted Potato Salad

2 tablespoons of Smude’s Cold Pressed Sunflower Oil
2 pounds of new potatoes, diced
1/2 medium sweet onion, chopped
1 bunch of green onions, chopped
2 cloves of garlic, minced
1 teaspoon of salt
Fresh ground pepper
8-10 slices of crisp bacon
1/2 cup of sour cream
Fresh, chopped parsley to garnish
Preheat oven to 425 degrees. Coat the dices potatoes, sweet onion, garlic, salt and pepper with Smude’s oil and arrange on a sheet pan in one layer. Roast in the oven for 30-35 minutes, stiring at least once.
Transfer potatoes to a large mixing bowl and add chopped green onion, bacon, and sour cream, and mix well. Serve warm or cold and garnish with fresh, chopped parsley. Serves 4- 6
