Italian Cucumber and Tomato Salad

Janel’s Italian Dressing made with Smude Cold Pressed High Oleic Sunflower Oil (recipe featured under Popular Recipes on this site)

Cucumbers, washed well, sliced thick (cut each slice into halves or quarters-I leave skin on)

Grape tomatoes, whole; or cherry tomatoes, cut in half; or other tomatoes, cut into pieces

Shredded parmesan cheese

Mix cucumber, tomatoes and Janel’s Italian dressing in large bowl. You can eat this immediately But I prefer to cover and refrigerate at least an hour or more. Remove from refrigerator, stir. If you like, transfer to a serving bowl. Sprinkle on the shredded parmessan cheese before serving (optional).
